I’ve been buying anchovies (and other tinned fish) from The Tinned Fish Market for a few years now and their tinned anchovies are always labelled as semi-cured and requiring refrigeration. I can’t recall seeing this recommendation on supermarket or major supplier brands in the UK.
Thanks for the explanations of the necessity for proper storage and exploring Marcela Garcés’ knowledge of the subject. I look forward to Anchovies Part II 🙏
